What is beef shank and how is it used in cooking?
Before diving into culinary uses, let’s clarify what beef shank is and where it comes from. In butchery, two types of beef shank are distinguished – fore shank and hind shank. But what are their characteristics?
-
Fore shank (with bone) comes from the middle part of the front leg, separated from the forequarter at the elbow joint. The cut includes the radius and ulna bones along with surrounding muscles.
-
Hind shank (with bone) comes from the middle part of the hind leg, separated at the knee joint. The tibia is removed, and the muscle groups include flexors and extensors.
Both types share many features: dense connective tissue, a rich collagen content, and clearly defined muscle bundles.
Culinary uses of beef shank
Now that we know where the shank comes from, let’s talk cooking. This cut is perfect for creating rich broths and stocks that serve as the flavorful foundation of many dishes. Because of its natural stickiness, beef shank is also ideal for:
-
Aspics (meat jelly)
-
Ground meat dishes like burgers
-
Homemade sausages
-
Preserved meat in jars (confit)
It also works wonderfully in braised or roasted dishes, or simply as a hearty cut of meat for a satisfying main course.
