Beef Neck – Characteristics and Culinary Uses
Where does beef neck come from? This cut is separated from the forequarter through a precise cut made parallel to the longitudinal axis, between the first rib and the junction of the seventh cervical vertebra with the first thoracic vertebra. It’s composed of dense, well-developed muscles, meaning it requires a longer cooking time to reach the perfect tenderness. Once cooked, fresh beef neck develops a uniquely soft, sticky texture thanks to its generous intramuscular fat.
So how can you unleash the full potential of this flavorful cut? The options are endless. For soup lovers, it can be used whole to prepare a rich, flavor-packed broth. Marinated in red wine, beer, or brandy and seasoned with aromatic spices, it becomes an excellent base for a fragrant, tender roast. Its gelatinous structure and bold flavor also make it a top pick for one-pot meals, pâtés, and rustic slow-cooked dishes.
