How to Pan-Sear a Delicious Dry-Aged Steak?
Juicy beef steaks are beloved not only by connoisseurs, but also by those who enjoy beef less frequently. So how do you cook them to delight your guests? Surprisingly, it's not as hard as it seems—just follow our step-by-step guide.
The first step is choosing the right meat. We recommend our dry-aged steaks, sourced directly from the renowned Polish producer CHOBOT MEAT Jan Ludwiniak. It's also important to select the right thickness based on your cooking method. For pan-searing, go for steaks that are around 2 to 3 cm thick.
Once your steak is ready and waiting in the fridge, here’s how to cook it:

Take the steak out of the fridge at least 30 minutes before cooking—for thicker cuts, let it sit for up to two hours. This is crucial: the meat should be at room temperature before hitting the pan.

Heat the pan to a very high temperature—hot enough that it starts to smoke. Don't add oil, but do open a window and turn on your hood.

Place the steak on the pan and sear evenly on both sides. How long should you cook it? For thinner steaks, sear for 2–3 minutes per side. For thicker cuts, extend to 3–4 minutes per side.

To elevate the flavor, you can lower the heat at the end and add a knob of butter, garlic, and fresh rosemary.

Once cooked, remove the steak and let it rest on a wooden cutting board for a few minutes. This step ensures the steak remains tender and the heat is evenly distributed.

After resting, slice to your preferred thickness and season with salt.
Important tip: Don’t overcook it! An overdone steak will be dry and lacking in the juicy, flavorful qualities that make beef such a treat.
