What do you need to prepare flavorful, delicate slices of beef tenderloin fried with eggplant, peanuts, coriander, honey, and rice vinegar for two?

  • 0.5 kg of high-quality beef tenderloin,
  • 1 eggplant,
  • 2 tablespoons of peanut butter,
  • 2 tablespoons of salted peanuts,
  • Chili pepper,
  • A bunch of coriander,
  • 1 tablespoon of honey,
  • A few tablespoons of rice vinegar,
  • 3 pinches of crushed black pepper,
  • Salt to taste,
  • A few pinches of ground fennel seeds,
  • 1/3 cup of cooking oil,
  • A few cloves of garlic

Once you’ve gathered all your ingredients, it’s time to roll up your sleeves and get cooking.

  1. Slice the tenderloin into pieces about half a centimeter thick.
  2. Peel the eggplant and slice it into equally thick pieces.
  3. Heat a bit of oil in a pan and sear the tenderloin with garlic for 30 seconds on each side.
  4. Once seared, transfer the meat to a plate and set aside.
  5. To the same pan, add a bit more oil, then add the eggplant and garlic. Season with salt and fry for a few minutes on each side.
  6. Time to plate! Start with the eggplant, then place the tenderloin on top. Drizzle with a mix of honey and peanut butter, splash with vinegar, and sprinkle with fennel seeds.
  7. Serve the dish with a salsa made from chopped peanuts, coriander, and chili pepper.
