Experienced treasure hunters know that before setting out, you must gather your team. The same principle applies here—selecting high-quality ingredients is the key to success. So what do we need to make Boeuf Bourguignon according to our recipe?
- 1–1.5 kg of beef
- 150–200 g of smoked bacon
- 3 tablespoons of flour
- 250 g of small mushrooms
- 2 carrots
- 6 shallots or 3 red onions
- 2 cloves of garlic
- 375 ml of beef broth (1.5 cups) or water
- 1 bottle of dry red wine
- 2 large bay leaves
- A few allspice berries
- 4 or 5 sprigs of fresh thyme
- 1 sprig of fresh parsley
- Salt, pepper
- Cooking oil
- Butter for frying

- Cut the beef into 1.5x1.5 or 2x2 cm cubes. Dice the bacon into small 0.5x0.5 cm cubes.
- Chop the shallots or red onions.
- Slice the carrots into thick rounds.
- Wash the mushrooms – peel them if possible. Remember, they should be bite-sized.
- In a large pot, fry the bacon and set it aside on a plate.
- Add a tablespoon of butter to the same pot and brown the beef in batches. Important – you want it lightly browned, not stewed, so work in small portions. Once browned, remove the meat from the pot.
- Add the onions to the pot and sauté until translucent.
- Add the carrots, then season with salt and pepper.
- Sprinkle in the flour.
- Return the beef to the pot and pour in the wine.
- Once the wine starts to boil, add the sautéed bacon, herb bundle, and spices.
- Pour in hot water or beef broth until the meat and vegetables are just covered.
- Cover the pot and place it in a preheated oven at 170°C (340°F) for two hours.
- 30 minutes before it’s done, add mushrooms sautéed in butter and continue to bake uncovered.
