How to make irresistible beef steaks?

Let’s start with the ultimate classic: beef steak! Any true beef enthusiast will tell you that the thought of a juicy steak instantly sparks hunger. But how do you cook this undisputed legend without drying it out or burning it – a mistake many grill fans consider a cardinal sin? Before choosing a steak cut, consider where you’ll be cooking it. The cooking method is the key factor when choosing steak thickness. Luckily, a juicy Tomahawk or tender Rib Eye can be prepared both in the backyard or the kitchen. Since the weather doesn’t always cooperate, we’ve prepared two versions of our steak recipe – one for the pan, and one for the grill.

 

How to cook a beef steak on a pan?

To prepare great pan-seared steaks for dinner, choose cuts between 2, 2.5, or 3 cm thick. That’s the sweet spot for maximum satisfaction. Here’s how to pan-sear steak to bring out its full potential:

  1. Take the meat out of the fridge and let it reach room temperature before cooking.
  2. Without adding oil, heat the pan until it’s very hot and starts smoking.
  3. Place the steak on the pan, turn on your kitchen fan, and open a window.
  4. Sear thin steaks for 2–3 minutes per side. For thicker cuts, increase the time slightly.
  5. You can add steak butter during cooking for extra flavor and gentle heat.
  6. Let the steak rest on a cutting board after cooking – this softens the meat and evens out the internal temperature.

While cooking, remember the golden rule: don’t overcook the steak – or you’ll dry it out and lose that rich flavor and texture.

How to grill beef steaks?

For grilled steaks, it’s best to go thicker. 4.5 cm is ideal, but 4 or 5 cm cuts work great too. Here's how to grill steak the traditional way:

  1. Preheat your grill to a very high temperature – about 420°C for gas grills, or 280°C for briquettes. Avoid letting the meat hit direct flames, which could burn it.
  2. Use a thermometer probe to monitor the steak’s internal temperature and reach your desired doneness. For medium rare, aim for 54–56°C. Flip the steak when it releases easily from the grate without force.

  • 200g of ground beef – we recommend our signature blend: beef for burgers,
  • a large sesame or nigella seed bun,
  • fresh vegetables: lettuce, tomato, red onion,
  • 1 tbsp water,
  • 1 tsp butter,
  • a slice of cheddar or mimolette cheese,
  • mayo, ketchup, or your favorite sauce.

How to make a beef burger that wins over any meat lover?

  1. Grind the meat using a coarse grinder plate.
  2. Place the meat in a bowl and add water.
  3. Mix thoroughly – the water helps emulsify and combine the fat with the meat.
  4. Form the meat into a patty. Press a small indent in the center to prevent it from shrinking while cooking.
  5. Place the patty on a hot grill pan.
  6. Cook for 3 minutes per side. For well-done, extend the time.
  7. Spread butter on both halves of the bun, toast them briefly on the pan, then spread your sauces inside.
  8. While searing the second side, top the patty with cheese so it melts.

How to make beef stroganoff? There are many versions, but they all start with high-quality beef and the right ingredients. Here’s what you’ll need:

  • 500g of beef – traditionally tenderloin, but chuck works too,
  • 2 small onions,
  • 1 red bell pepper,
  • 2 tbsp wheat flour,
  • 300g mushrooms,
  • oil for frying,
  • 3 tbsp thick cream,
  • 2 tbsp tomato paste,
  • 500 ml broth (beef, chicken, or vegetable),
  • Spices: 2 bay leaves, 2 allspice berries, a few peppercorns, 1 flat tsp salt, 1 tsp ground pepper, ½ tsp hot paprika, 2 tsp sweet paprika.

Once you have the ingredients, here’s how to proceed:

  1. Slice the onion into feathers and the pepper into strips.
  2. Cut the beef into 1 cm strips across the grain and coat in flour.
  3. Sauté the onion until golden, then set aside in a bowl.
  4. Fry the meat in batches – don’t crowd the pan or the beef will steam instead of sear.
  5. Once browned, add the pepper, mushrooms (halved if large), and tomato paste.
  6. Add broth, spices, and simmer until the beef is tender. Stir regularly. Tenderloin cooks faster than chuck.
  7. Mix some broth with cream in a bowl and pour it back into the pan.
  8. Taste and adjust seasoning.
