- Without adding oil, heat the pan until it’s very hot and starts smoking.
- Place the steak on the pan, turn on your kitchen fan, and open a window.
- Sear thin steaks for 2–3 minutes per side. For thicker cuts, increase the time slightly.
- You can add steak butter during cooking for extra flavor and gentle heat.
- Let the steak rest on a cutting board after cooking – this softens the meat and evens out the internal temperature.

- 300g mushrooms,
- oil for frying,
- 3 tbsp thick cream,
- 2 tbsp tomato paste,
- 500 ml broth (beef, chicken, or vegetable),
- Spices: 2 bay leaves, 2 allspice berries, a few peppercorns, 1 flat tsp salt, 1 tsp ground pepper, ½ tsp hot paprika, 2 tsp sweet paprika.
